Ingredients
  

  • - 1/2 can chickpeas rinsed and drained
  • - 1/2 cup low-fat cottage cheese
  • - 2 tablespoons natural peanut butter
  • - 3 tablespoons maple syrup or honey
  • - 2 teaspoons vanilla extract
  • - 2 tablespoons almond or coconut flour
  • - 1/4 teaspoon sea salt
  • - 1/3 cup dark chocolate chips

Instructions
 

  • In a food processor, combine chickpeas, cottage cheese, peanut butter, maple syrup, and vanilla. Blend until smooth and creamy.
  • Add almond or coconut flour and salt. Blend again until thickened to cookie dough consistency.
  • Fold in chocolate chips. Taste and adjust sweetness if needed.
