Equipment

  • Food processor or high-powered blender
  • Measuring cups and spoons
  • Mixing bowl (if not using the food processor directly)
  • Airtight container for storage

Ingredients

  • 1 cup gluten-free purity protocol oats
  • 6 tbsp peanut butter or sunflower seed butter for nut-free
  • ¼ cup vanilla protein powder
  • ¼ cup almond milk or milk of choice
  • 2 tbsp mini chocolate chips optional

Instructions

  • Place oats, peanut butter, protein powder, and milk into your food processor.
  • Pulse until the mixture forms a thick, cookie dough–like consistency.
  • Adjust texture: if too dry, add milk a teaspoon at a time; if too sticky, add oats.
  • Fold in chocolate chips if using.
  • Roll into 1-inch balls.
  • Store in the fridge for up to 1 week or freeze for up to 3 months.

Notes

Always choose certified gluten-free oats to prevent cross-contamination.
For extra sweetness, add 1–2 tbsp maple syrup or honey.
These taste amazing alongside my Healthy Almond Flour Banana Muffins for a snack box combo, or pair them with No-Bake Almond Joy Bars for a dessert-style platter.
